We all know watermelon is the official go-to fruit of the summer, especially when you have it in a Yogurt + Fruit Watermelon Bowl or a cocktail like our The Guava Watermelon Margarita.
Also, who doesn’t have fond memories of the long hot dog days of summer taken down a notch with a cool and deliciously juicy slice of watermelon juice dripping down our collective arms?
This has refreshing written all over it; it’s sweet in all the right places with equal measures of savory.
Ingredients needed to make a Watermelon Feta Salad with Blueberry Balsamic Glaze
Watermelon. It’s watermelon season, and now is the best time to enjoy some fresh, juicy watermelon. If you’re a fan of watermelon, try these watermelon recipes: Watermelon Vodka Cocktail, Watermelon Pink Lemonade Vodka Cocktail, or this Watermelon Strawberry Basil Cocktail.
Feta Cheese. This combination is everything if you haven’t paired feta cheese and fruit together!
Balsamic Glaze. Blueberries. Our blueberry balsamic glaze gets a citrusy kick from fresh lemon zest — the layer of feta cheese pairs exceptionally well with the firm, sweet fruit of the watermelon.
Mint. Daikon Radish Shoots. The hints of mint and the sprouted daikon radish shoots add their palatable earthiness to the mix, making this salad one of the best I’ve ever had.
It’s hard to imagine a salad tasting as good as this one does by balancing so many complimentary flavors together in perfect proportions, and it’s as refreshing as summer rain.
Summer salad idea: Watermelon Feta Salad
1 Serving
Ingredients:
- (2) 4″ x 4″ x 1″ watermelon squares
- (1) 4″ x 4″ feta square (or feta cheese crumbles are fine)
- 1 cup sprouted daikon shoots
- 2 tablespoons blueberry simple syrup
- 2 tablespoons balsamic glaze
- 1/2 teaspoon lemon zest
- 2-3 fresh mint leaves cut into thin strips
Directions:
- Mix the blueberry simple syrup, balsamic glaze, and lemon zest in a small bowl. Set aside.
- Place sprouted daikon radish shoots in a salad bowl, arrange a square of watermelon on top, then slather with a tablespoon of the blueberry and balsamic glaze mixture, and add the feta cheese.
- Place the second watermelon square on top and slather with the remaining blueberry and balsamic glaze mixture.
- Garnish with the thin slices of fresh mint.
- Serve.
Recipe for a Blueberry Simple Syrup:
- Add a cup of water, a cup of sugar, and a cup of fresh blueberries to a small saucepan.
- Bring to a boil and stir for 3 minutes. Mash the berries with a fork, remove the pot from heat and cover with a tight-fitting lid.
- Allow the syrup to steep for 10 minutes. Strain the syrup through a fine-mesh sieve into a mason jar, screw on the lid, and keep it in the fridge for up to two weeks.
What can I use instead of feta for this recipe?
If you don’t like feta or can’t get your hands on it, reach for mozzarella or even blue cheese.
These are two other varieties of cheese that will compliment the watermelon.
Do I have to cut the watermelon into squares?
No, you are welcome to cut your watermelon and ingredients any way you want.
I loved the look of the squares but feel free to cube it up, chop, etc.
You could even make this into a classic bite-size diced-up salad.
Can I make this watermelon recipe in advance?
I find this salad is best to make right before serving.
I find that the watermelon and cheese can break down a bit if it is all mixed together.
You can pre-slice ingredients in advance and then assemble them right before serving.
