Vegan Veggie + Hummus Tostadas
Hummus.
Derrick and I both are huge hummus fans. Over the past few years, we have worked recipes with hummus into our dinner menu, and the boys fell in love with it too! One of the twins will eat hummus on just about everything. We recently implemented make-your-own-dinner night at our house, so I don’t have to cook the boys can learn how to be independent and pick up a few cooking techniques. This particular teen twin added hummus to his salad, which he said was quite good.
National Hummus Day is coming up on May 13th, and we put our heads together to come up with a healthy and satisfying way to celebrate it. Our Vegan Veggie + Hummus Tostadas are the perfect pick-me-up snack. They can also be a great game day appetizer and even a dinner idea. This recipe using Sabra hummus left me filling full (but with a light feeling) and satisfied. It’s a great unofficial meal idea when you want something light to eat or a snack between lunch and dinner.
One thing that connects people together is food. You may root for a different sports team, put your roll of toilet paper on the wrong way, and parent differently. But food, however, is something everyone can agree about and love! And fresh hummus is something that connects us all together. Sometimes we will stand around a container of Sabra hummus, dip our tortilla chips in, and munch. No talking. Just munching. After a few bites, a light conversation will start, followed by one of the boys doing something funny. Creating a family moment together over a container of Sabra hummus is priceless.
During the summer months, we love to entertain outdoors. Having hummus is always a staple at our party. When you’re scurrying around trying to put all the food together, have a bowl of hummus and chips on the table. People will start to congregate around it like the waterhole at work. Hummus is the connector that brings us all together.
For this hummus tostada recipe, we used Sabra Roasted Red Pepper Hummus. It’s one of my favorite hummus varieties by Sabra. I love red peppers, so naturally, this recipe which consists of the classic hummus recipe and roasted peppers spoke directly to my foodie heart.
We started by prepping all of the veggies. Grab the Sabra Roasted Red Pepper Hummus from the fridge (or you can go with another Sabra variety).
Now it’s time to put the Tostada together.
Spread the hummus on one side of a toasted tostada. Top with chopped salad greens, green onions, cucumbers, sweet red peppers, banana peppers, and a sprig of cilantro.
EAT!
And that’s it! A super, simple, healthy recipe idea. And, if you eat a few of these, you will not want dinner. This was seriously delicious, so I had a few. And eating my hummus tostadas I was full, but not a heavy full you get when you know you ate too much food. I felt refreshed. This is what hummus, plus a few other healthy ingredients will do to your body. I’ve recently eliminated select foods from my diet, so I am loving the idea of being able to incorporate hummus into fresh and healthy recipes.
Ingredients:
- 1 tostada
- 2 1/2 tablespoons Sabra Hummus
- 1/2 cup mixed salad greens chopped
- 1/3 teaspoon green onion, minced
- 1 medium yellow banana peppers thinly sliced into rings
- 1/4 medium cucumber thinly sliced with the outer skin removed
- 1/4 sweet red pepper thinly sliced (julienned)
- sprig of fresh cilantro
Directions:
- Prepare all veggies and set aside.
- Spread hummus on one side of a toasted tostada.
- Top with green onion, chopped salad greens, cucumber, sweet red peppers, banana peppers, and a sprig of cilantro.
- Done and serve!
