Vegan Dole Whip + Matchia + Chai Seeds
With only these three things
I was sitting on the couch thumbing through a magazine and BAM! It hit me! What?! Okay, here’s how it all went down. I arrived home about 30 minutes ago from a business trip which took me mostly across the Upper Peninsula of Michigan. North country, rugged, sparse, and plenty rural. It was wildly exhilarating! For instance, while there I had my first black bear encounter (sighting?) in a place called Camp Arrowhead. There is something about seeing such a big mammal in its natural habitat and not safely locked inside of a zoo enclosure. Without barriers, experiencing wild things is quite a different perspective. So, I proceeded with extreme caution. I also saw countless white-headed bald eagles and looked out across a sparkling Lake Michigan shoreline along I-75 heading due west. But wait! Wasn’t I talking about my Vegan Dole Whip + Matchia + Chai Seeds recipe?

Fresh organically grown pineapple is pineapple on a whole different level
If you think there is no comparison between pineapple in a can and fresh organic pineapple, then you got another thing coming. Pineapple from a can is not the same as fresh pineapple cut up and eaten as is minus sweeteners, like high fructose corn syrup and other not so legit ingredients. But, how you do tell if a pineapple is ripe? So, glad I asked for you. If you can smell the strong aroma of pineapple then you know it is ripe.
Okay, let me get back on track. I will talk more about the Upper Peninsula of Michigan later. By the way, there’s no correlation between my road trip and this particular recipe. Just sayin’. I just wanted to talk about my trip. Sorry?! And, if you ever find yourself in the U.P. do stop at the Poulette overlook and marvel at the astonishing view. The sound of the waves hitting the shore is joyfully seductive and reason enough to make the sojourn north of the Mackinac Bridge.
See the container of Trader Joe’s Soy Creamy Non-Diary Frozen Dessert? Well, it’s vanilla flavored. It is made with organic soymilk and cane sugar, and it is also certified vegan! All good things when you are looking for something guilt-free and healthy to eat. Most folks are of the opinion that eating well translates into eating food that isn’t very tasty and delicious. Not true at all. Trust me!

Why am I so excited?
The numero uno reason I am majorly excited about this lil’ impromptu recipe has more to do with my wife than anyone or anything else. A bit of back story is in order, no? Almost two years ago the Mrs. developed an extreme case of lactose intolerance. It seemed like overnight she went from sharing our favorite Ben & Jerry’s Chunky Monkey ice cream together, to me having to eat a whole pint of ice cream in one sitting all by my lonesome. YIKES! So, now my blushing bride has an aversion to all dairy products. No more bovine milk-based food staples at all. Zero. Zilch. Zoinks! Well, that’s not completely true. We discovered A2 milk which her system can tolerate without any problems. So, if you or anybody you know has a lactose intolerance issue, I highly recommend giving A2 milk a try but first consult your doctor. I am not Dr. Oz. Dr. Scarcrow or Dr. Tin Man and certainly not Dr. Cowardly Lion.

Directions on how to make Vegan Dole Whip:
Ingredients:
- 1 cup Trader Joes Vanilla Soy Ice Cream
- 1/2 cup fresh pineapple
- 1 tablespoon Matchia tea
Directions:
- Into the pitcher of a blender add vanilla soy ice cream, fresh pineapple and 1 tablespoon of Matchia tea.
- Pulse until smooth, add more soy ice cream if you desire a thicker shake.
- Spoon into a glass and top with thin slices of fresh pineapple and a dusting of Matchia.
- Serve.

I’ve heard all about Dole Whips, but never had occasion to eat one.
This looks SO easy to make and I bet it is a refreshing treat on a warm day.

Am I the only person who isn’t big on those chia seeds? I do love a good Dole Whip though and will be enjoying quite a few on my Disney trip this summer.
