Red, White & Blue Tequila Piña Colada

I made the red and blue ice cubes using Tovolo’s King Cube ice molds, food coloring, and distilled water.
This weekend, celebrate the 4th with this fun red, white, and blue cocktail!
What You Will Need:
Tequila Blanco. Unaged tequila blanco, or silver tequila, provides a clean, crisp taste that highlights the natural flavors of the agave plant. It adds a smooth, slightly sweet undertone to the cocktail.
Mezcal. Mezcal, known for its distinctive smoky flavor, is made from agave plants roasted in underground pits. This smoky element complements the sweetness of the Piña colada mix and pineapple juice, adding depth and complexity to the drink.

Pineapple Juice. Lime Juice. Pineapple juice enhances the tropical flavor profile of the drink with its bright, tangy sweetness. Freshly squeezed lime juice adds a zesty, citrusy kick that balances the sweetness of the other ingredients. It also provides a refreshing acidity that brightens the overall flavor of the cocktail.
Block of Blue or Red Ice. The colored ice cubes, made using food coloring and Tovolo’s King Cube ice molds, add a festive and patriotic touch to the cocktail. As the ice melts, it subtly changes the drink’s color, adding to the visual enjoyment without diluting the flavors too quickly.
Ingredients:
- ice
- 1 ounce Tequila Blanco
- 1 ounce mezcal
- 1 1/2 ounces Piña colada mix
- 1 1/2 ounces pineapple juice
- 1/2 ounce lime juice, freshly squeezed
- sprig of fresh mint
- block of blue or red ice
Directions:
- Add ice, 1 ounce of tequila blanco, 1 ounce of mezcal, 1.5 ounces of Piña colada mix, 1.5 ounces of pineapple juice, and 1/2 ounce of freshly squeezed lime juice to a cocktail shaker.
- Secure the lid and shake vigorously for thirty seconds.
- Strain into a rocks glass of a block of blue or red ice.
- Serve with a sprig of fresh mint.
How to make the block of red or blue ice
Ingredients:
- Water
- Food coloring (red or blue)
Equipment:
- Square ice cube tray or square mold
Instructions:
- Prepare the Water:
- Start with clean, filtered water for the best clarity.
- If you want clear ice, boil the water first and let it cool before using it. This removes some of the dissolved gases that cause cloudiness.
- Add Food Coloring:
- In a small bowl or measuring cup, mix a few drops of red or blue food coloring into the water. Adjust the amount of food coloring to achieve your desired shade.
- Pour into Mold:
- Pour the colored water into an ice cube tray or a mold that creates larger blocks suitable for rocks glasses. Silicone molds work well for this purpose.
- Freeze:
- Place the tray or mold in the freezer. Allow the water to freeze completely, which typically takes several hours or overnight.
- Remove and Store:
- Once the ice is frozen solid, remove the ice blocks from the mold. If you’re not using them immediately, store them in a freezer bag or container to prevent them from absorbing odors from other foods in the freezer.
Tips:
- For a more intense color, add more food coloring.
- To create layered or marbled ice, freeze the water in stages, adding a few drops of food coloring at each stage and swirling gently with a toothpick before freezing the next layer.
- If you prefer not to use food coloring, use red grenadine or blue raspberry syrup.
