Summer is here, and we’re ready to party! We love to entertain during the summer months on our patio and over the last few weeks, we’ve been working hard to get it ready for summer. When it comes to summer entertainment, we put a lot of focus on serving good food.

Our Loaded Avocado Dip pairs well with Cape Cod Waves® Potato Chips
Ingredients:
- 5 Avocados, seeds removed and skins removed
- 3-4 tablespoons extra virgin olive oil
- 2 stalks green onion sliced
- 3 tablespoons chopped cilantro
- 3 tablespoons chopped parsley
- 1/2 medium green bell pepper diced
- 1/4 cup chopped spinach, one small diced red onion
- 1 small zucchini roughly peeled and diced
- 2 medium jalapeños with seeds removed and the ribs removed ( one diced and the other sliced into thin slices)
- 1 lime juiced
- smoked sea salt to taste
Directions:
- Into a food processor add the five avocados, extra virgin olive oil, cilantro, parsley, and smoked sea salt.
- Blend on high until the ingredients are smooth.
- Fold in half of the diced red onion and all of the diced jalapeño and mix well.
- Spoon the avocado into a serving dish and top with the diced zucchini, sliced green onion, green bell pepper, and the remaining diced red onion, and the jalapeño slices.
- And a pinch of smoked sea salt drizzle with extra virgin olive oil.
- Serve with Cape Cod Waves® potato chips.

Warm Red Potatoes with Kale, Bacon & Parmesan
Ingredients:
- 12 red skin potatoes, washed and cut in half
- 3 cups curly kale
- 6- 8 strips of thick-cut bacon cooked until crispy then crumbled
- 2 cloves garlic minced fine
- 3 1/2 tablespoons extra virgin olive oil
- 1 cup shredded Parmesan cheese
- 1 tablespoon Old Bay seasoning
- 1/2 tablespoon freshly ground black peppercorns
- 1/4 teaspoon of coarse sea salt
Directions:
- Preheat the oven to 400 degrees, arrange the bacon on a cookie sheet pan lined with aluminum foil, press a length of parchment paper over the bacon, and cook bacon on the center rack until the bacon is crispy—about 20 minutes. Remove from the oven and place on a plate lined with a paper towel. Set aside.
- Place a large skillet over medium-high heat and add two tablespoons of extra virgin olive oil. When the olive oil is hot, add the red skin potatoes; stir often to keep the potatoes from sticking, and cook until slightly browned and tender.
- Transfer the potatoes to a bowl and wipe the skillet clean. Add the remaining olive oil to the skillet and return it to heat. Add the kale and the garlic, and sauté until the kale is bright green and tender.
- Spoon the red potatoes and the kale into a serving bowl, and toss with the shredded Parmesan cheese. Add sea salt and freshly cracked black peppercorns to taste, and top with crumbled bacon.
- Serve.
Fizzy Strawberry Mango Punch
Ingredients:
- 1 2-liter lemon-lime soda
- 1 cup strawberry syrup
- 1 33.8 ounces mango juice
- 32 ounces white grape juice
- 1 pint fresh strawberries sliced thin
- Ice
- Strawberry slush: fresh pineapple chunks, 2 cups of strawberries, juice of 1 lemon, and 1 cup of sugar.
Directions:
- Mix lemon-lime soda, strawberry syrup, white grape juice, and mango juice in a large bowl.
- Fill glasses with ice and pour punch into glasses.
- Top with the Strawberry Slush.
- Garnish with fresh slices of strawberries. Serve.
I put together a simple tablescape for our summer party. You can find summer items like decorative melamine plates, outdoor glassware, and flatware at Walmart to use for your table. For our outdoor parties, we keep the table simple and let the food be the star of the show.
