Slow Cooker Chicken Noodle Soup
Chicken Noodle Soup is the perfect way to warm the body and the soul on a cold day. It’s also feels great in your belly and throat when your sick. With this easy homemade recipe, you can use your slow cooker to make the perfect Chicken Noodle Soup.
1 package of wide egg noodles, any brand
1 rotisserie chicken (including the skin), diced (about 3-4 cups of chicken)
4 C. of chicken broth OR you can use 4 cups of water and 4 chicken bouillon cubes
1 C. of carrots, sliced and diced
1 C. celery, sliced and diced
½ medium onion, diced
2 tbs. oil
2 tsp. parsley
salt & pepper to taste
Directions for Slow Cooker Chicken Noodle Soup
Add the 2 tbs. of oil to a frying pan and heat. Saute the celery, carrots and onion for 5-10 minutes.
Next, add ALL the ingredients to the slow cooker along with the broth and some salt and pepper to taste.
Cook on low 3-4 hours in the slow cooker.
About 1 hour prior to serving cook the eggs noodles separately as directed on the package. Add a few handfuls into the soup and let simmer in the soup for about 1 hour. I’ll be honest, I usually don’t measure at this point.
If I end up need more broth, I simply add some more into the slow cooker.
Serve with crackers.
