Savory Asparagus + Balsamic Parmesan
Summertime means a lot of things to lots of people, and one of the most agreeable outdoors activities is cooking foods over a charcoal grill. Am I right? It doesn’t matter if you’re an amateur or a pitmaster there’s nothing like firing up the charcoal grill and cooking some of your favorite foods over lots of smoke-infused heat. Personally, for me, that boils down to lots of weekday and weekend dinners prepared over a glowing hot charcoal fire. Mains, sides and even a few desserts get the grill treatment, and they’re better for it.
Case in point. Recently, I picked up some fresh asparagus at our local farmers’ market and prepared them on the grill and let me tell you it was simply delicious. I’m telling you it’s impossible to go wrong with this one. And it makes for a great side for grilled chicken breasts, beef or salmon steaks. If you like asparagus, you will love this recipe.
When it comes to grilling it’s always best to get the fire going as quickly as possible because you want to give the charcoal plenty of time to get to temperature before you are ready to add whatever you’re cooking on the grill. I love getting the fire started using my Weber starter chimney. If you like charcoal grilling, then a Weber starter chimney is the way to go because it significantly cuts down the amount of time it takes to get the charcoal briquettes from zero to white-hot in short order.
There is something about cooking with fresh ingredients, and this bunch of asparagus turned out great with minced ginger and lots of chopped garlic. I also used melted sweet cream butter, grated Parmesan off of the block, and a drizzle of balsamic glaze.

So, on your next trip to the farmers’ market, make sure to grab a big bunch of asparagus, and try this recipe. Also, this recipe works well with Brussel Sprouts and broccoli.
Ingredients:
- 2 bunches of asparagus
- 1/2 stick sweet cream butter melted
- 3 cloves garlic minced
- 1 1/2 inches of grated ginger
- 1 teaspoon coarse sea salt
- 1/4 cup balsamic glaze
- 1/2 cup Parmesan Reggiano
Directions:
- Get charcoal briquettes going on the grill. When the coals are hot, add your choice of wood chips. Close the lid and allow the grill to heat up.
- Wash, trim, and pat the asparagus dry.
- Place the asparagus in an oven-safe skillet and add the melted butter, minced garlic, and ginger.
- Using your grill mitt place the skillet with the asparagus onto the hot grate and close the lid.
- Allow the asparagus to cook for six minutes or until bright green and tender.
- Drizzle the asparagus with Balsamic glaze and top with Parmesan Reggiano.
- Serve.

Ingredients
- 2 bunches of asparagus
- 1/2 stick sweet cream butter melted
- 3 cloves garlic minced
