A cold glass of homemade lemonade is the perfect way to enjoy your day. However, let’s kick it up a notch by adding a little vodka, lemon, and cucumber to make a refreshingly, frosty cold summer cocktail. This Lemon & Cucumber Lemonade Vodka Cocktail is great for summer entertainment or just when you need something cool and refreshing to sip on to help you wind down.
Lemon & Cucumber Lemonade Vodka Cocktail
Who wants a frosty cold glass of refreshing Lemon & Cucumber Lemonade? I mean, if you think regular lemonade is the end all, be all of the summertime beverages then I beg of you to reconsider. Our version of this classic summer staple takes the refreshment game to the stratosphere. And all you need is to add two ingredients.
Reyka vodka and just picked and extra fresh sliced cucumbers. That’s it? Yes, that’s it.
But If you don’t want the vodka it’s okay, with the addition of the cucumbers to the sweet and lemony sour is a surprisingly delicious combination. Get the recipe down below and here’s to a great summer. Cheers!
Ingredients:
This recipe makes 1 quart of Lemon & Cucumber Lemonade
- 1/2 cup Cucumbers, sliced
- 2 Lemons, sliced
- 4 – 6 Tbsp of Pre-Sweetened Lemonade (or use your own recipe)
- 3 – 4 ounces Reyka Vodka
- Crushed Ice
Directions:
- Note: Make lemonade according to your taste. Sweeter or less sweet it is all up to you. I also make only enough lemonade to fill a pitcher 3/4 of the way full. To leave room for ice and in this case the sliced cucumbers and lemons.
- Make lemonade in a large pitcher.
- Add sliced cucumbers and lemons.
- Mix in the Reyka vodka (or vodka of your choice).
- Taste, adjust the potency of vodka to your liking.
- Add ice.
- Garnish with a fresh spring of mint, optional
- Serve.
Can I Double The Recipe
Go right ahead and make a larger batch of this cocktail if you want. This makes a quart but you are more than welcome to make a double or even triple batch.
Just don’t add ice until you are ready to serve. Otherwise, the ice will melt down the drink.
How to Make This Non-Alcoholic
Simply leave out the vodka. For a fizzy twist you can replace the vodka with some lemon lime soda or bubbly water. This will give a bit of a twist to the lemonade!
Can I Make This Recipe With Pink Lemonade
Yes, go right ahead and use a pink lemonade to replace to plain. Even a raspberry or strawberry flavored lemonade would be a delicious pair with the cucumbers and vodka.
Can I Do A Limeade Instead of Lemonade
So if you want grab some limeade and swap out the lemon portions for limeade and garnish with limes vs lemon wedges. This is a wonderful swap that will give you a nice tart and sweet flavor that will still be thirst quenching.
Storing Leftovers
If you do not drink all of this lemonade cocktail, it can store in the fridge overnight. What I do is run it through a seize or colander to pull off the ice. Then store the mixture in the fridge. Removing the ice helps prevent it from watering down.
Drink responsibly, and never drink and drive.
