It’s a delicious spring or summer dinner idea, using fresh veggies and lamb served over a bed of rice.
Lamb Asado, Rice + Garden Vegetable Skewers
With three sons heading in different directions throughout the day, Derrick and I do our best to create easy dinner ideas that don’t require much time and work for our fast-paced lifestyle.
There’s nothing as valuable as having go-to items in our pantry we can reach for when we need to get dinner on the table and time is not on our side.
For me, Minute Rice has rescued dinner more times than I can count! This good-tasting and reliable rice is done in under 10 minutes.
It’s also the rice my mom used, and since it worked for her busy schedule as a teacher, it works for me.
We were able to pick up the ingredients we needed at Kroger.
We shop at Kroger weekly, taking advantage of their sales + digital offers, and the convenience of Kroger Pickup.
For this dinner idea, we prepared Lamb Asado + Summer Garden Vegetable Skewers, and in around 30-minutes, supper was finished and on the table.
Derrick started by brushing each lamb chop with a pre-made roasted chipotle sauce and marinating them for 20 minutes at room temperature.
He also added fresh basil and mint from the garden.
We’re making this recipe using our grill, but you can cook the lamb in a skillet using the stovetop.
Last, Derrick made the Minute Rice according to the package directions.
He also finished the rice by adding roasted garlic and a drizzle of herb-infused olive oil.
What You Will Need To Make Our Lamb Asado, Rice + Garden Vegetable Skewers
Rice. We used the Minute White Rice, but you can also use the Minute Jasmine Rice. We also keep multiple boxes of each in our pantry for when I need to get dinner on the table in short order. Trust me, when you need to come up with dinner ideas quickly, having Minute Rice in your pantry is handy.
Lamb. Adobo Sauce. I brushed eight lamb chops with a pre-made chipotle sauce, then added 1/3 cup olive oil, freshly cracked black peppercorns, 1/2 tsp of smoked paprika, 1 tsp sea salt, sprigs of fresh mint, and basil.
Bell Peppers. Red Onion. Summer Squash. I made easy vegetable skewers using tri-colored bell peppers, a green bell pepper, red onion, and ribbons of green summer squash. I brushed them with melted unsalted butter and EVOO mixture and seasoned them with sea salt, freshly cracked black peppercorns, and Old Bay seasoning.
Ingredients needed for this recipe:
- 8 lamb chops
- 1 cup premade medium-heat chipotle sauce
- 1/3 cup EVOO
- 1/2 tsp smoked paprika
- 1/2 tbsp freshly cracked black peppercorns
- 1 tsp sea salt
- 3-4 sprigs of fresh basil
- 3-4 sprigs of fresh mint
Tip: You will want to marinate the lamb chops for a few hours or overnight in the chipotle mixture to allow the flavors to penetrate the meat fully.
Directions on how to make lamb Asado
Reserve a few tablespoons of the marinade to finish the lamb chops after they are off the grill.
I preheated the grill to 300°F, cooked the lamb chops until they reached an internal temperature of around 110-115°F, removed them from the grill, adjusted the temperature to around 450-500°F, and seared them for about a minute per side.
Remove the lamb chops and rest for 15 minutes to allow the juices to redistribute. Brush the lamb chops with some of the reserved marinade, then serve.
What you need to make Summer Grilled Vegetable Skewers
Serving Size: 4-6
Ingredients:
- 1 large orange bell pepper cut into chunks
- 1 large red bell pepper cut into chunks
- 1 large yellow bell pepper cut into chunks
- 1 large green bell pepper cut into chunks
- 1 large medium red onion cut into chunks
- 1 large green or yellow summer squash cut into chunks or ribbons
- 2 tbsp EVOO
- 2 tbsp unsalted butter
- 1 tsp Old Bay seasoning
- sea salt to taste
- freshly cracked black peppercorns to taste
Tip: Soak the wooden skewers in water for about 30 minutes before threading the vegetables on them. This helps prevent the skewers from burning while grilling.
Directions:
- Melt the butter in a small microwave-safe bowl using the microwave, add the extra virgin olive oil, and season and mix well. Set aside.
- Arrange the cut vegetable on a wooden skewer and alternate the colors for visual appeal.
- Brush the veggies with olive oil, melted butter, and seasoning mixture. Cook on a preheated 300-400°F for 3-4 minutes per side. Remove from the grill and serve.

How to make rice in a minute:
To make the Minute White Rice, follow the instructions on the package.
I added two sauteed cloves of garlic, and when the rice was finished, I drizzled on herb-infused EVOO.
And that’s how I created a quick and delicious dinner with Minute Rice.

Yes, you need to cook the steaks as directed and then allow them to rest for 15 minutes.
This will lock in juices and give your meat that ultra-rich flavor you know and love.
If you slice into a steak too quickly, all the liquid will run out, leaving the meat very dry.
Can you eat the lamb raw?
You can eat lamb raw if you sear all sides of the steak.
Searing the steaks on the grill helps kill harmful bacteria on the outside of the meat.
You can then slice and serve the lamb raw if you would like.
Is lamb healthier than beef?
Eating lamb over steak is a healthier option.
Lamb has vitamins and nutrients in the meat that are great to incorporate into your diet.
You will find lamb can be fattier, but trimming meat can help give you nice, clean cuts of the meat to serve.
