Creamy Pink Raspberry Cocktail
Valentine’s Day is around the corner, and if you need a new pink drink cocktail to swoon over, we have exactly what the occasion calls for!
Our Creamy Raspberry Cocktail might make you forget all the other pink cocktails —YES, it’s that good!
Made with ripe raspberries, sweetened lime juice, coconut cream, pineapple juice, and rum, this is the perfect little number to sip on for Valentine’s Day!
And no worries—it’s easy to make it into a Mocktail, subbing the rum with Lyre’s White Cane Spirit.
Both options result in the perfect pretty drink full of flavor! Cheers!
What You Will Need:
Fresh Raspberries. The muddled raspberries set the tone for this drink, adding a fresh summer flavor and a light pink color that makes you feel good all over. Possible substitutes are strawberries or Marashino cherries.
Sweetened Lime Juice. Sweetened lime juice adds a vibrancy to this drink, making it feel a little tropical. Fresh lime juice works well, too.
Simple Syrup. Who doesn’t love a bit of sweetness from time to time? We used homemade simple syrup, but you can also use agave syrup or maple syrup, or to add a deep raspberry color and flavor, use raspberry syrup.
Blanco Rum. Rum is used in many tropical and feel-good summery drinks; this one is no exception. You can also use a spiced rum, or to take it to another level, add a half-ounce of mezcal to add a smoky element.
Sweetened Coconut Cream & Pineapple Juice. We said yes to sweetened coconut cream and pineapple because they give this sipper a pina colada vibe, and we love it!
Garnish. We used a small wedge of lime for this cocktail, but you can also use a lemon wedge or fresh raspberries on a cocktail stick.
Tip on finding heart-shaped glassware. Check home stores, such as HomeGoods (where we found the above glassware), World Market, Target, etc. Anthropologie has a similar heart-shaped coupe.
Ingredients for Pink Raspberry Cocktail

- 4-6 ripe raspberries
- 1/2 ounce of sweetened lime juice
- 1/2 ounce of simple syrup
- 2 ounces of blanco rum
- 2 tbsps of sweetened coconut cream
- 2 ounces of pineapple juice
Directions:
- In a cocktail mixing glass, muddle 4-6 ripe raspberries.
- Add 2 tbsps of sweetened lime juice, 2 ounces of blanco rum, 1/2 ounce of simple syrup, 2 tbsps of sweetened coconut cream, and 2 ounces of pineapple juice.
- Shake vigorously for 30 seconds.
- Double-strain into a serving glass.
- Garnish with a small lime wedge on a cocktail stick.
- Serve.
Here’s how to turn this Creamy Pink Raspberry into a mocktail:
- 4-6 ripe raspberries
- 1/2 ounce sweetened lime juice
- 1/2 ounce of simple syrup
- 2 ounces of Lyre’s White Cane Spirit (n/a)
- 2 tbsps of sweetened coconut cream
- 2 ounces of pineapple juice

For a richer and more satisfying taste, we went with organic pineapple juice, and after the first sip, we don’t think you’ll regret it.
This is hands down our favorite cream of coconut; whenever a drink calls for sweetened coconut flavor, this is the one.
To sweeten our cocktail, we made a homemade simple syrup:
- 1 cup filtered water
- 1 cup granulated or superfine sugar
Combine the ingredients in a saucepan and bring to a low boil; reduce the heat to low and cover with a tight-fitting lid.
Allow the syrup to steep for fifteen minutes and store in an air-tight container for up to two weeks.
*You can also use half a cup of fruit, like fresh raspberries, strawberries, blackberries, and blueberries, to make an easy fruit-based syrup.
Mash the fruit into the simmering syrup, then strain out the fruit pieces using a fine mesh sieve.
When it comes to sweeteners, you have options:
Our homemade simple syrup is a great option, but you can also use:
- agave syrup
- maple syrup
- honey
Don’t Like Rum, No Worries:
Not everyone is partial to rum; here are a few additional spirits that rise to the occasion.
Vodka. I love vodka because it’s a neutral spirit that blends easily with ingredients without adding a lingering or prominent aftertaste or smell. A raspberry-flavored vodka is also an excellent choice.
Sloe Gin. Sloe Gin, not to be confused with traditional gin, works well, too. The fruit-forward taste profile of sloe gin includes notes of ripe cherry and pomegranate with hints of sweetness, tartness, and warmth that will take this drink above and beyond.
Liqueurs. I enjoy using liqueurs instead of base spirits; they typically have a lower alcohol content. However, there are exceptions. A stand-in that works well with this recipe is a raspberry liqueur like Chambord or Dekuyer Razzmatazz.
