Chicken Pot Pie Spaghetti { + date night ideas}
Yes, my eyes did a double take too! Is it me or does the title say what it says? Our take on the traditional chicken pot recipe may be whimsical and all that jazz, but it is also very unnecessarily delicious! Which makes this a great pick for a romantic date night dinner.
I know it may sound like a lot of work but with a bit of day-ahead prep, you can have this baby on the table in just under an hour.
Which gives you plenty of time to set the mood. First, a bit of advice, choose your pasta well. Ideally, you want quality pasta, and that’s why I am using Barilla® Classic Blue Box Spaghetti. This is a perfect date night recipe because it is a one dish wonder, and what significant other wouldn’t be impressed with a homemade candlelit dinner for two? Plus, my wife loves pot pies. So this Valentine’s Day I went off the beaten track in regards to romantic dinners, but I stayed on the straight and narrow of well-made romantic food. I set the table, lit a few candles, and chilled the bubbly. Then I wowed her with hearty comfort food. Good food is the way to a woman’s heart of heart. Diamonds are those who can’t cook, and with Barilla® pasta, well they have my back every time. Barilla® Pasta is my wingman!
Alright, let’s make a Chicken Pot Pie Spaghetti! Here is what you’ll need.
Ingredients:
- 1/2 pound Barilla® Classic Blue Box Spaghetti, cooked and drained
- 1 pound boneless and skinless chicken breast, but into cubes
- 1 cup frozen baby peas
- 1 cup whole kernel corn
- 1 cup asparagus tops
- 1 large red potato, partially skinned with any bad spots removed, cut into 1/2″ cubes
- 1 small yellow onion, chopped
- 1/2 medium red sweet bell pepper, diced
- 1/2 medium green bell pepper, diced
- 2 garlic cloves, minced
- 5 tablespoons extra virgin or light olive oil, divided
- sea salt, to taste
- freshly ground black peppercorns, to taste
- Old Bay seasoning, to taste
- 2 twelve-inch prepared pie shells
Prep work:
Into a medium skillet add two (2) tablespoons of olive oil, when the oil is hot add the onions and potatoes, continue to cook until the onions are translucent and the potatoes are browned and tender. Spoon the mixture into a bowl and set aside.
Add one (1) tablespoon of olive oil to the skillet and sauté the red sweet bell pepper and green bell pepper for three (3) minutes over med-high heat. Spoon peppers into the bowl with the onion and potato mixture.
If needed, add one tablespoon of olive oil to the skillet and sauté the asparagus tips over med-high heat for four to five (4-5) minutes. Spoon asparagus into vegetable mixture.
Rinse and pat the chicken dry with paper towels, then cut the chicken into cubes. Pour the last tablespoon of olive into the skillet over med-high heat, when the skillet is hot add the chicken and cook until the chicken is brown. Add sea salt, freshly cracked black peppercorns, and Old Bay Seasoning to taste. Add the chicken to the rest of the vegetable mixture.
Barilla® Classic Blue Box Spaghetti
- Cook 1/4 box of the Barilla® Classic Blue Box Spaghetti following the directions on the package. Drain and add to the vegetable and chicken mixture.
Sauce
Ingredients:
- 1/3 cup all-purpose flour
- 1/2 cup whole milk
- 1 1/4 cup chicken stock or broth
- 1/2 stick unsalted butter
- 1/2 teaspoon sea salt
- 1/3 freshly ground black peppercorns
Directions:
In a large skillet over med-high heat melt the butter, when the butter is melted sprinkle in the flour, sea salt, and freshly ground black peppercorns. Keep stirring and do let the mixture burn. This should result in a medium paste.
Stir in the whole milk and the chicken stock, continue stirring until the mixture begins to bubble and thicken. Pour sauce over the vegetable, chicken and spaghetti mixture and mix well.
Spoon the chicken and spaghetti mixture into a prepared pie shell, smooth the top.
Add the top pastry pie shell and crimp along the edges. Brush the top with egg wash.
Egg Wash
Ingredients:
- 1 egg
- 1 tablespoon whole milk or heavy cream
Directions:
- Crack a single egg into a small bowl, add whole milk or heavy cream. Whisk with a fork until egg and liquid are combined.
- Using a small baker’s brush coat the top of the pastry. Using a fork poke a few holes to help with venting.
- Place on the center rack of a 425 degree preheated oven.
- Bake for 35 minutes.
- Remove from the oven and let stand for five minutes.
- Serve.

- Go Park In Your Driveway: Grab the baby monitor so you can hear if the kids need you, bundle up and head out to your car and have a fun makeout session like you would have done when you were teenagers. Just because you can’t leave the kids alone, doesn’t mean you can’t still have fun together after they go to sleep.
- Take A Bubble Bath Together: Light a few candles, turn down the lights and grab your favorite rich bubble bath. Run a nice warm bath and invite your spouse in for a relaxing bath together.
- Dance In The Living Room: Cue up your favorite romantic songs, turn the lights down low and slow dance together under the stars or simply in your living room.
- Sex: Now I know you’re thinking “that takes energy.” Sometimes you may have just enough energy to get “down and dirty” with your partner. And you can have lazy sex. You know the kind that doesn’t require a lot of energy and perfect for exhausted parents.
