Tomato + Cheesy Egg Toast Recipe
Let’s do brunch. The food is going to be off the chain delicious with our crispy, cheesy, and buttery egg toast with a slice of tomato on top. Yes, these babies are the real deal, and they look just as good as they taste. So, let’s grab a French baguette, eggs, your favorite cheese, and fresh herbs, and some ripe tomatoes. Heirloom or small tomato varieties or Roma tomatoes work well also. You will also need a couple of tablespoons of unsalted butter and equal tablespoons of extra virgin olive oil. Ready? Okay then, let’s get busy.
What type of bread to use in an Egg Toast recipe?
Our Tomato + Cheesy Egg Toast Recipe is thick-crusted French bread slices with the middle scooped out. The slices are brushed with a mixture of herbs, melted butter, and extra virgin olive oil. Crack an egg over the bread slices then add lots of your favorite cheeses like Parmesan-Reggiano, Romano, Gruyère, Mozzarella, or whatever type of cheese you like. And to finish, add some tomatoes.
I used a typical globe tomato, but feel free to add (or not add) whatever type of tomato you fancy. A sprinkle of flaky sea salt and freshly cracked black peppercorns is all the seasoning you’ll need. The last and most crucial step is to place each full slice of bread slice on a cookie or baking sheet and place on the middle rack of a preheated oven set on high broil until the tops are golden brown and the cheese is melted. Serve warm.

Herb Buttered Egg Toast Recipe
Ingredients:
- 1 French Baguette, sliced into one-inch slices
- 4 tablespoons extra virgin olive oil
- 4 tablespoons melted unsalted butter
- 1 single egg for each slice of toast
- 1 large tomato or cherry tomatoes cut into half slices
- 2-3 sprigs fresh thyme
- 2-3 sprigs fresh rosemary
- 1/2 cup fresh basil (optional)
- 1 1/2 cup shredded four-cheese mixture or your favorite easily meltable cheese
Directions:
- Preheat oven on high broil.
- Cut the French baguette into one-inch slices.
- Hollow out the middle of the bread slices and save the removed portion of bread for homemade breadcrumbs or croutons.
- Brush each bread slice (top and bottom) with the herb, melted butter, and extra virgin olive oil mixture.
- Place a skillet over medium heat and toast the bottom of each slice of bread.
- Arrange the slices of bread with the toasted bottoms onto a cooking sheet.
- Crack an egg over each slice of prepared bread.
- Add lots of shredded cheese and a tomato slice or slices of bread.
- Place sheet pan on the middle rack of a preheated oven set on high broil.
- Broil until the bread is golden brown, the cheese is melted.
- Remove from the oven and serve immediately.
- Smear with strawberry jam or preserves. (optional)
