Recipe for Butternut Squash Bat Soup
Tis the season for soups. There’s something cozy and warm about having a bowl of hot soup on a cold fall day.
This is an October state-of-mind dish bursting with fall flavors and a fun Halloween feel.
You can make a simple and easy soup recipe and get your kids excited for dinner or use it for a Halloween party.
This butternut squash soup can be used all season long but adding a few ingredients to make it a themed holiday food.
What You Will Need
Olive Oil. Salt and Pepper.
Onion. I prefer to use a white or yellow onion for this recipe.
Garlic. Mince it up, and you will saute it with the onions to help bring out the richness in the soup.
Butternut squash. This is going to be the star of the soup. Make sure you pick a ripe and hearty squash, which helps bring out the flavor in the soup.
Chicken Broth. Store-bought or homemade works great. If you want a vegetarian option, then reach for a vegetable broth.
Cream Cheese. This is going to help add thickness and creaminess to the soup.
Bowtie Pasta. When you cut the cooked pasta, it looks like a flying bat!
Black Food Coloring. Color your pasta for that spooky feel.
Is Butternut Squash and Butternut Pumpkin The Same Thing?
You will find those who live in New Zealand and Australia often refer to a butternut squash as a butternut pumpkin.
The two are indeed the same squash. It is just known by different names, depending on where you live.
What is the flavor of butternut squash?
Unlike other squash varieties, you will find that butternut offers a sweeter component.
Depending on who you ask, some say it tastes like a sweet potato, and others even have mentioned butterscotch.
You get that sweet and savory flavoring when you eat this soup—the onions and garlic help to enrich the soup, giving it a lot of depth.
Ingredients to make the Butternut Squash Bat Soup:
- Prep Time: 5 minutes
- Cook Time: 30 minutes
- Total Time: 35 minutes
Serving Size: 4-6
- 1 Tablespoon extra virgin olive oil
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 4 cups cubed butternut squash
- 3 cups chicken broth
- 4 ounces of cream cheese
- ½ teaspoon salt
- ¼ teaspoon pepper
Pasta ingredients:
- 1 cup bowtie pasta
- ½ cup water
- Black Food Coloring
Directions on how to make butternut soup
- In a dutch oven, heat the olive oil over medium-high heat.
- Saute the onion in the heated oil and cook until tender and transparent.
- Add the garlic and cook for one additional minute.
- Add the butternut squash and chicken broth. Cover and simmer for 25 minutes or until the squash is tender.
- Allow the soup to cool before pureeing it in a blender or food processor.
- Return the soup to the pan and heat. Add the cream cheese, salt, and pepper and stir until fully incorporated.
How to make the Pasta
- Prepare the pasta as directed on the box.
- Rinse the pasta under water to cool, then place it in a large ziplock bag.
- Add black food coloring and move the pasta around until fully coated.
- Allow it to sit for 5 minutes.
- Place the dyed pasta in a strainer and rinse until the water runs clear.
- Serve pasta bats on top of the soup.
How to Color Pasta With Food Coloring
To color pasta with food coloring is easy.
Cook your pasta as directed on the box. Drain the pasta once it is cooked thoroughly.
I used bowtie pasta for this particular recipe.
Place cooled pasta in a sealable bag, add food coloring, and shake it up to coat all the pasta.
Let it sit for around 5 minutes to help the food coloring soak into the pasta.
Dump pasta out in a strainer, and rinse well to wash off any excess pasta.
How to Cut Bowtie Pasta To Look Like A Bat
If you take your dyed pasta and grab a pair of scissors, you can cut the tip off the pasta to give it a bat look.
You can angle the pasta to give it a curved look as it would be for the wings and then the bat head.
You can see in my soup pictures it is pretty easy to achieve the look.
Can I Make the Soup Without The Pasta Bats
If you are looking for just a butternut soup, go ahead and make this without the pasta added on top.
It is an incredible recipe; I just loved its Halloween feel! But skip the pasta, and eat this soup all year round if you want.

How to Store Leftovers
If you don’t plan to eat all the soup immediately, store any leftovers in the fridge in a proper container. The soup can last anywhere from 3-4 days.
Reheat in the microwave or on low heat on the stove. Stir, as it can burn if you turn the stove up to higher heat.
In terms of freezing, due to the cream cheese, you will find the soup will curdle and separate if you freeze it. So I do not recommend doing this.
