Serves 4
Ingredients:
For the Salmon
- 2 pounds of fresh skinless salmon fillets
- 1/3 cup low-sodium soy sauce
- 1/4 cup local honey
- 1 tbsp low-sodium fish sauce
- 1 tbsp toasted sesame oil
- oyster sauce
- peanut oil
Directions:
- Preheat the air fryer to 400 degrees.
- Cut the salmon into strips and cut into 1-1 1/2 inch cubes.
- Combine the low-sodium soy sauce, low-sodium fish sauce, honey, and toasted sesame oil in a bowl.
- Add the salmon cubes and allow the fish to marinate for fifteen (10-12 ) minutes.
- Arrange the salmon chunks on the air fryer tray lined with organic or unbleached parchment paper.
- Air fry for five to seven (5-7) minutes.
- Remove and serve immediately.
Note: It will depend on the size of your air fryer to determine how many cubes of salmon you will get in your small kitchen appliance.

- 1 pound of thin spaghetti pasta
- 1 /2 cup of light or low-sodium soy sauce
- 2 tbsps of low-sodium fish sauce

- 1 tbsp of honey or light brown sugar
- 1 tbsp of ground ginger or 2 tbsp of freshly grated ginger
Directions:
- Fill a large stock pot with water and place over high heat.
- Add a pinch or two of salt, and allow the water to boil.
- Cook the thin spaghetti following the package directions until the pasta is al dente.
- While the pasta is boiling, place a medium-sized skillet over medium-high heat, and add 1 tbsp of peanut oil or other high smoke point oil.
- When the oil is hot, add the onions, broccoli, green and red bell peppers and saute until the vegetables are cooked through but still crisp and tender.
- Turn off the skillet. Now, drain the pasta using a colander, add the pasta and the stir-fried vegetables a little at a time, and toss.
- Add the remaining toasted sesame oil, low-sodium fish, soy sauce, honey, light brown sugar, and raw or ground ginger.
- Continue to toss to evening coat the pasta and the vegetables.
