This no-bake recipe is easy to make for Easter dinner or a spring/summer dessert.
What You Will Need
Cool Whip. I love using this premade substitute instead of homemade whipped cream, especially when I am short on time. And if you’re a baller on a budget, it’s much cheaper than making whipped cream.
Cream Cheese and Marshmallow Creme. Adding cream cheese and marshmallow creme to this recipe adds a lot of creaminess and flavor; the marshmallow creme’s sweetness balances the cream cheese’s sourness.
Fresh Blueberries. Fresh blueberries are the star of this easy dessert, and choosing North Bay Produce is a no-brainer when using the best blueberries you can buy.
Sandwich Cookies. Listen. All sandwich cookies aren’t created equal—they just aren’t! We used Biscoff Lotus Vanilla Cream sandwich cookies because they make the best cookie crumbles I’ve ever tasted. No cap!
Blue Curacao Liqueur or Syrup. To make the cream component of this recipe a light baby blue, we used three tablespoons of Blue Curacao liqueur. However, use blue curacao syrup or blue food coloring if you want a deep color.
Ingredients for No-Bake Blueberry Dessert
- 1-8 oz of room-temperature cream cheese
- 1-8 oz of thawed cool whip
- 1 jar (7 oz) of marshmallow creme
- 1 cup fresh North Bay Blueberries
- 3 tablespoons blue curacao liqueur or syrup
- 6-8 lotus vanilla cream sandwich cookies
Directions:
- Add 8 oz of room-temperature cream cheese, 8 oz of thawed Cool Whip, 7 ounces of marshmallow creme, 1 cup of fresh blueberries, and three tablespoons of blue curacao liqueur or syrup to a stand mixer fitted with the whisk attachment.
- Whip until the mixture is thoroughly incorporated and fluffy; if you desire a fluffier mixture, add two tubs of Cool Whip. Spoon the mixture into a bowl, cover it with plastic, and place it in the fridge until you can use it.
- Add the cookies and pulse to a food processor until they are crumbled and resemble course sand.
- To make, layer the ingredients. Put the blueberries into a serving glass, add the cream mixture, add more blueberries and cookie crumbles, then repeat.
- Top with more blueberries and cookie crumbles.
