Easy Antipasto Skewers with Tortellini
Are you looking for a quick and easy appetizer? Our Antipasto Skewers may be the answer.
They’re made with marinated mini mozzarella balls, savory uncured Genoa black pepper salami, Al dente cheese tortellini, fresh red onion, and sweet red bell peppers.
I love this appetizer because it requires minimum work, and when you prep the ingredients a day or two ahead of service, it comes together quickly.

Here’s What You Need:
Cheese Tortellini. Store-bought cheese tortellini works well in this simple but yummy appetizer; also, using prepared cheese tortellini will save time, and they’re ready in under five minutes.
Mini Mozzarella Balls. You can also buy marinated mozzarella to save time. Still, they will be larger than my mini version using Belgioioso fresh mozzarella snacking cheese and a few ingredients in your pantry.
Genoa Black Pepper Salami. When it comes to the type of meat, you have options. You can use classic charcuterie, cured and uncured meats like Prosciutto, genoa salami, chorizo, soppressata, ham, and sausages. Also, don’t forget to make meatless and vegetarian options.
Spanish Onion, Sweet Bell Pepper. We used slices of Spanish, commonly known as red onions and sweet bell pepper. But you can also use cherry tomatoes and fresh sweet basil. Or choose from a variety of peppers.
Ingredients for Antipasto Skewers:
Serving size: 3-4 per person (you will make how many skewers are based on the number of people you are serving. So if you are serving 4 people, you will want to make at least 16-20).

- Marinated Mozzarella Balls
- Genoa Black Pepper Salami
- Red Onions
- Sweet Bell Pepper

Directions:
- Prepare the cheese tortellini according to the package instructions. After cooking, drain and chill them immediately in an ice bath.
- Prep the red onions and sweet red bell peppers.
- Build the skewers by alternating the ingredients onto the bamboo skewer.
- Serve with your favorite dip. I used a creamy ranch dressing.
How To Make Marinated Mozzarella Balls
- 1 cup of mini mozzarella balls
- 3/4 cup extra virgin olive oil
- 1 tbsp Italian seasoning
- 1/8 tsp or ground sumac 0r sweet paprika
Additional Marinade Ingredients to consider:
- fresh rosemary, thyme, or oregano
- red pepper flakes
- sliced garlic cloves
- sundried tomatoes
- chopped sweet basil leaves
- balsamic vinegar
- lemon zest
Directions:
- Place the mini mozzarella balls in a medium bowl.
- Add 3/4 of EVOO,1 tbsp of Italian seasoning, and 1/8 of sweet paprika.
- Stir the ingredients to coat evenly.
- Marinate for at least an hour before using.
- When stored in an airtight container, they will last for up to 7 days.
