No Bake Holiday Cookie To Make In 15 Minutes

Not only are they easy to make (about 15 minutes), but you don’t have to bake anything!
You will have to pull out your food processor for one of the steps, but everything else is easy to put together.
We’re using store-bought cookies for this recipe to save time, but if you feel up to doing some baking, you could use homemade chocolate cookies. A sugar cookie or gingerbread cookie would be ideal.
What You Need
Large Cookies. You can make or buy chocolate cookies for this. I like to use unfrosted chocolate sugar cookies as they are fluffy and soft and are a perfect size.
Frosting. Grab a container of vanilla frosting, or whip up a batch of buttercream frosting to spread on to act as the glue for your design. Check out these easy buttercream frosting recipes.
Coconut. The frosting and cookie are sweet enough without the added sugar from the coconut. Reach for unsweetened coconut flakes.
Powdered Sugar. A little sugar is needed to help give a paw look to these polar bear cookies.
Peppermint Patties and Junior Mints. The mint candies compliment the cookie and frosting but are the perfect prints for the cookies to look like a bear paw.

Ingredients:
- 12 Large Chocolate Cookies (store-bought or homemade)
- (1) 16-ounce container of vanilla frosting
- ½ cup shredded coconut (unsweetened)
- 2 Tablespoons powdered sugar
- Clear Sparkle Sprinkles
- 12 Peppermint Patties
- 36 Junior Mint Candies
Directions:
- Apply a generous layer of frosting to each chocolate cookie, leaving a bit of chocolate cookie showing out around the edges. Set aside.
- In a food processor, combine the coconut and powdered sugar. Use the pulse setting five times to chop the coconut mix into tiny shreds.
- Sprinkle a little bit of the sugared coconut mix on each cookie.
- Use the clear sparkling sprinkles over the top to fill in any open gaps.
- Press the peppermint patties into the bottom center of each cookie.
- Press three junior mints on top of the peppermint patties.
- Serve and enjoy!
Can I make these cookies a day in advance?
Yes, you can make these cookies up to a day in advance.
Just be sure you store them in an airtight container. Otherwise, the polar bear paw cookies will dry out.
Then right before serving, uncover and serve.
Could I use a vanilla cookie instead of chocolate?
Sure, you could use a white cookie.
It could be for a white polar bear vs. a chocolate or brown-looking bear.
Go right ahead and change up the color of the cookies if you want.
Can I freeze cookies?
Yes, these cookies will freeze.
I do recommend placing a layer of wax paper between stacking cookies.
This is going to prevent the cookies from sticking together in the freezer.
Then freeze in a freezer container or freezer bag.
The cookies can freeze for 3-4 months.
What if I don’t want to use coconut?
Reach for a white sprinkle to replace the coconut if you want.
Or you can leave it off altogether, but I find it helps to give it a nicer look.
You could even use glittery sanding sugar.
Can I change up the candies on the cookies?
Go ahead and use M&Ms and smaller chocolate cookies instead of peppermint candies.
You could even do mini Oreos for the paws and a regular-size Oreo for the big paw.
Now, you could take the cookie apart and place the cookie portion, not the filling, on the cookies to not make them so heavy.
